Creamy Mexican Mold:

This is great and you can eat it with crackers or nachos. It takes about 15min. to prepare and 4 to 5 hours to set.

2-1/4 cups Thick 'N Chunky Salsa
1 cup Reduced Fat or Light Sour Cream
1/3 cup chopped pitted black olives
1/3 cup sliced green onions
1 tsp. hot pepper sauce
2 envelopes KNOX Unflavored Gelatine
2/3 cup tomato juice
Crackers or Nachos

Preparation:
MIX salsa, sour cream, olives, onions and hot pepper sauce in medium bowl; set aside.
SPRINKLE gelatine over tomato juice in small saucepan; let stand 1 minute. Cook on low heat 3 minutes or until gelatine is completely dissolved, stirring constantly. Add to salsa mixture; stir until well blended. Pour into 4-cup mold.
REFRIGERATE 4 hours or until firm. Unmold onto serving plate. Serve with crackers.

Peach Cream Cake:

1 (10 3/4-ounce) prepared loaf angel food cake, frozen
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 cup cold water
1 teaspoon almond extract
1 (4-serving size) package instant vanilla pudding mix
2 cups (1 pint) whipping cream, whipped
4 cups peeled, sliced fresh peaches (about 2 pounds)
Instructions
Cut cake into 1/4-inch slices; arrange half the slices on bottom of 13x9-inch baking dish.
In large bowl, combine EAGLE BRAND®, water and almond extract; mix well. Add pudding mix; beat well. Chill 5 minutes.
Fold in whipped cream. Spread half the cream mixture over cake slices; arrange half the peach slices on the top. Top with remaining cake slices, cream filling and peach slices.
Chill 4 hours or until set. Cut into squares to serve. Store leftovers covered in refrigerator.

This recipe makes one 13 x 9 inch cake in about 15 minutes.... what more could you ask for...

Today I have a new recipe called Sunshine Molded Salad:
Qty. Measurement Description
20 ounces crushed pineapple, in its own juice
26 ounces tropical fruit salad in light syrup
2 tablespoons unflavored gelatin
1/2 cup lemon juice, fresh or frozen
1/2 cup sugar
Set a strainer over a 4-cup measure; add pineapple, pressing on it to extract the juice. Set the pineapple aside.
  1. Drain the juices from the tropical fruit salad into the measuring cup with the pineapple juice; add enough water to measure 2 3/4 cups [for recipe serving 8].
  2. In a small bowl, sprinkle gelatin over lemon juice; let stand until softened.
  3. In a small saucepan, bring the fruit juices to a simmer. Remove from the heat and whisk in the softened gelatin and sugar, stirring until dissolved.
  4. Refrigerate the mixture until it is slightly thickened, about 1 1/2 hours. (Alternatively, set the pan over a large bowl of ice and stir until thickened to the consistency of egg whites.)
  5. Stir in the reserved pineapple and tropical fruit. Pour into an 8-cup mold and refrigerate until set, about 2 hours.
  6. Unmold just before serving.
I love jello salads with fruit - especially with the hot weather coming it is sure to cool you off!

Hershey Kisses Peanut Blossoms

another great cookie recipe - peanut butter cookie topped with a kiss

48 Hershey's kisses, 1tsp baking soda
1/2cup shortening, 2tbsp milk
3/4cup peanut butter, 1tsp vanilla
1/3cup granulated sugar, 1-1/2cup flour
1/3cup lightly packed brown sugar, 1 egg
1/2tsp salt granulated sugar

heat oven to 375 - remove wrappers from chocolates - beat shortening & peanut butter in large bowl til well blended - add granulated sugar & brown sugar-beat til fluffy-add egg, milk & vanilla-beat well - shape dough into 1inch balls-roll in granulated sugar-place on ungreased cookie sheet-bake 8to10min or til lightly brown-immediately press a chocolate into center remove from cookie sheet and cool

I am looking for a recipe - I was told it was called Quick Cabbage Rolls - It is kind of a cheat recipe cause it is all cooked like a casserole. If anyone has a recipe for this please post it here.

Oat Delights:
2 cup sugar 1/2 tsp vanilla
6 tbsp cocoa 1 cup shredded coconut
1/2 cup butter 3 cup quick oats
1/2 cup milk
Combine sugar, cocoa, butter and milk in saucepan - bring to boil - add vanilla - remove from heat and add remaining ingredients - drop by teaspoon onto wax paper - chill
4 1/2 dozen

This one is great - all done on stove top no baking required - quick and easy drop cookies!
