Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jelly roll pan. Sift together the flour, baking soda, cinnamon and salt. Set aside.
2. In a large bowl, beat sugar, oil and eggs until smooth. Mix in the flour mixture. Stir in the baby food carrots.
3. Spread batter into a 10x15 inch jelly roll pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
I have found if you love this recipe you can revise it a bit...substitute an equal amount of apple sauce for the oil. Makes the cake lighter and drastically reduces the fat calories. Now if we can just make the frosting calorie free!!! : )

for more great recipes go to Recipes to Collect
also a great wine site to check out All About Wine

Simply Sensational Stir-Fry

Prep: 15 mins Ready in: 25 mins

1 envelope Zesty Italian Salad Dressing Mix
1/4 cup orange juice
2 Tbsp. soy sauce
1/4 cup oil
1 lb. lean boneless beef sirloin , cut into strips
1 pkg. Fill up a large saucepan half-way with water and gently add the eggs. Cover the eggs with at least an inch of water. Add a teaspoon of vinegar to the water (this will help contain egg whites from leaking out if any of the shells crack while cooking). Bring the water to a boil. Cover, and remove from heat. Let sit covered for 15-17 minutes. Drain hot water from pan and run cold water over the eggs. (At this point if you crack the egg shells while the eggs are cooling, it will make it easier to peel the shells.) Let sit in the cool water a few minutes, changing the water if necessary to keep it cool.

2 Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter.

3 Using a fork, mash up the yolks and add mustard, mayonnaise, onion, celery, tabasco, and a sprinkling of salt and pepper. Spanish Rice is a delicious accompaniment to steak, chicken, and Mexican entrees such as tacos or enchiladas.

Spanish rice is prepared by browning the rice first with onions and garlic, before cooking it in chicken broth with added tomato. The browning is essential to the nutty, almost toasty flavor of the rice. And although bouillon can be substituted for the chicken stock, nothing beats homemade chicken stock, the rich flavor of which is absorbed by the rice,

2 tablespoons olive oil (can use up to 1/4 cup)
1 onion, chopped fine
1 garlic clove, minced
2 cups of medium or long-grain white rice
3 cups* chicken stock (or vegetable stock if vegetarian)
1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained
Pinch of oregano
1 teaspoon salt

*Check the instructions on the rice package for the proportions of liquid to rice. They can range from 1:1 to 2:1. If your rice calls for 2 cups of water for every cup of rice, then for this recipe, use 4 cups of stock for 2 cups of rice.

In a large skillet brown rice in olive oil, medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, about 4 minutes, or until onions are softened.

In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package. Turn off heat and let sit for 5 minutes.

Serves 4 to 6.

for more great recipes go to Recipes to Collect
also a great wine site to check out All About Wine

Lazy Perogie Casserole

This is very rich. Use more beef if you need more than 6 servings. Brown beef in a bit of vegetable oil, although you can skip this step if rushed for time. Slice onion and separate into rings. Dice the peeled carrots, dice the celery and slice the peppers into thin strips or circles. Place these into bottom of crockpot. Sprinkle the beef pieces with fresh ground black pepper, minced garlic and the onion soup mix. Place on top of the vegetables.

Mix the steak sauce and worcestershire sauce in a small bowl with about 1/2 cup water and 1/2 cup tomato juice. Pour this over the meat.

Turn the crockpot to High for 30 minutes, or, if you're in a hurry, skip this step. Turn to Low, cover and cook for 7-9 hours.

Keep the crockpot covered as much as possible throughout cooking time. A crockpot can be used to cook this type of meal for a varied amount of time, depending on your schedule. It is not important that you take the meat and vegetables out at a specific amount of time. One or two hours either way usually makes no difference.
When ready to serve, dip meat and vegetables out of pot with a slotted spoon. Use the liquid as is or turn crockpot to High and thicken liquid with a little flour or cornstarch.

for more great recipes go to Recipes to Collect
also a great wine site to check out All About Wine

HONEY BUTTER

This is a simple and good spread for bread or toast;

* 3/4 cup butter, room temperature
* 1/4 cup honey
Add cinnamon, if desired.

Whipped Shortbread - Set the pineapple aside.

Drain the juices from the tropical fruit salad into the measuring cup with the pineapple juice; add enough water to measure 2 3/4 cups [for recipe serving 8].

In a small bowl, sprinkle gelatin over lemon juice; let stand until softened.

In a small saucepan, bring the fruit juices to a simmer. Remove from the heat and whisk in the softened gelatin and sugar, stirring until dissolved.

Refrigerate the mixture until it is slightly thickened, about 1 1/2 hours. (Alternatively, set the pan over a large bowl of ice and stir until thickened to the consistency of egg whites.)

Stir in the reserved pineapple and tropical fruit. Pour into an 8-cup mold and refrigerate until set, about 2 hours.

Unmold just before serving.

I love jello salads with fruit - especially with the hot weather coming it is sure to cool you off!
Try this i'm sure you will enjoy....

Hershey Kisses Peanut Blossoms

another great cookie recipe - peanut butter cookie topped with a kiss

48 Hershey's kisses, 1tsp baking soda
1/2cup shortening, 2tbsp milk
3/4cup peanut butter, 1tsp vanilla
1/3cup granulated sugar, 1-1/2cup flour
1/3cup lightly packed brown sugar, 1 egg
1/2tsp salt granulated sugar

heat oven to 375 - remove wrappers from chocolates - beat shortening & peanut butter in large bowl til well blended - add granulated sugar & brown sugar-beat til fluffy-add egg, milk & vanilla-beat well - shape dough into 1inch balls-roll in granulated sugar-place on ungreased cookie sheet-bake 8to10min or til lightly brown-immediately press a chocolate into center remove from cookie sheet and cool

More Great Recipes Click Here

Looking For Quick Cabbage Rolls
I am looking for a recipe - I was told it was called Quick Cabbage Rolls - It is kind of a cheat recipe cause it is all cooked like a casserole.
